Ingredients

Is everything you make sourdough?

Yes, all Banyan Breads products are made with sourdough. My starter is named Stanley and he is a part of the family!

Is your bread organic?

No, I try to buy organic ingredients where I can and when it makes sense but my bread is not 100% organic.

What flour do you use?

I primarily use Mountain Mama Milling Organic Stone Ground Whole Wheat flour from the San Luis Valley and King Arthur Sir Galahad Bread flour.

Do you make anything gluten-free?

No. Everything I make is very gluten-full.

Micro-Bakery

Where do you do your baking?

I do all my baking in my home in Salida! I converted my breakfast nook into a micro-bakery complete with an electric three-deck bread oven that allows me to bake about 15 standard loaves at a time.

Is your space regulated by the health inspector?

No, thanks to the Colorado Cottage Foods Act! My micro-bakery is not a commercial space and therefore not inspected or regulated by any state or federal agency. Bread is also considered a very "low risk" item for food-born illnesses. But don't worry - I am ServSafe certified and I spent years working for multiple professional bakeries, so I always follow best practices in my kitchen.
